Shrimp and Crab Cakes

30-MINUTE, FAMILY FAVORITE

SERVES 4 • PREP TIME 15 minutes • COOK TIME 15 minutes • PREHEAT 375°F

What’s one way to improve delicious crab cakes? Add some chopped cooked shrimp. The combination of textures and flavors in this recipe is excellent. Seafood lovers will gobble them up.

1 cup lump crabmeat

1 cup chopped cooked shrimp

3 scallions, finely chopped

1 egg, beaten

¼ cup mayonnaise

2 tablespoons honey mustard

¾ cup saltine cracker crumbs, divided

1 tablespoon fresh lemon juice

Cooking oil, for misting

Nonstick cooking spray

1.In a medium bowl, combine the crabmeat, shrimp, scallions, egg, mayonnaise, honey mustard, ¼ cup of cracker crumbs, and the lemon juice; mix gently.

2.Form into 4 patties. Sprinkle with the remaining ½ cup of cracker crumbs on both sides. Mist with cooking oil.

3.Set or preheat the air fryer to 375°F.

4.Line the air fryer basket with a round of parchment paper that has holes punched into it. Coat the paper with cooking spray. Put the patties on the parchment paper. Cook for 10 to 14 minutes or until the patties are set and golden brown.

MAKE IT A MEAL Add a green salad topped with mushrooms and tomatoes, and serve the cakes with a sauce made from ½ cup mayonnaise, 2 tablespoons mustard, 2 tablespoons sweet pickle relish, and ⅛ teaspoon cayenne pepper. Baked potatoes on the side would be delicious.
